This is pretty much the best pumpkin spice cake I have ever had. I think the frosting is what pushed this one over the edge for me. I don't usually lick frosting before it is on the dessert (that's what Ryan is for) but this one made me rethink my stand on being a non-frosting-licker. The candied pecans didn't hurt, either--next time I will double the pecans!<span class="Apple-style-span" style="text-align: left;"> </span></div>

For the cake:</div>

Preheat the oven to 350 F. Grease and flour a 9x13 baking dish, set aside.</div>

Mix all the dry ingredients in the bowl of a stand mixer fitted with the paddle attachment. Pour in the melted butter, pumpkin puree, and eggs. Mix together until completely incorporated and smooth.</div>

Pour into prepared pan and bake for 30-40 minutes until the cake bounces back when pressed and a toothpick inserted comes out clean.</div>

For the frosting:</div>

Place cream cheese, butter, maple syrup, and vanilla in the bowl of a stand mixer fitted with the paddle attachment. Beat until light and creamy. Slowly add the powdered sugar and beat until desired consistency. If you need to thin it out a bit just add milk a teaspoon at a time. Refrigerate frosting until ready to use. </div>

For the pecans:</div>

Place the pecans in a skillet over medium heat, drizzle with syrup and sprinkle with salt. Keep the pecans moving until all the syrup is clinging to the pecans and begins to crystallize, this will take several minutes. The nuts will become glossy when they are done. The syrup coating will harden up a bit as they cool. Transfer to a cutting board and coarsely chop. Once cooled, sprinkle over the frosted cake. </div>

Store the cake in the refrigerator, it will keep for several days...if it lasts that long.<br />

I have only used this on chicken but she also recommends using it for New York strip steak. </div><div><br /></div><div>1 cup balsamic vinegar</div><div>3/4 cup ketchup</div><div>1/3 cup brown sugar</div><div>1 garlic clove, minced</div><div>1 tablespoon Worcestershire sauce</div><div>1 tablespoon Dijon mustard</div><div>1/2 teaspoon salt</div><div>1/2 teaspoon freshly ground black pepper</div><div><br /></div><div>To make the sauce:</div><div>Combine all ingredients in a small saucepan and stir until all the ingredients are incorporated and the mixture is smooth. Simmer over medium heat until reduced by 1/3, about 15-20 minutes. </div><div><br /></div><div>For the chicken (or steak):</div><div>Place a grill pan over medium heat or preheat your BBQ. Season the meat with salt and pepper. Lightly coat with some of the BBQ sauce using a pastry brush. Place the meat on the grill. Place the remaining BBQ sauce, still in small saucepan, over low heat or on the edge of a BBQ grill and allow to gently simmer while the meat cooks. </div><div>Cook the chicken about 8 minutes per side. Bring maple syrup to a boil then remove from heat.<br />2. In a large bowl, whisk egg yolks and pour a little bit of the maple syrup in while whisking (this is to temper your egg yolks so they don’t curdle).<br />3. Add warmed egg yolks to hot maple syrup until well mixed.<br />4. Measure 1/4 cup of whipping cream in a bowl and sprinkle it with the gelatine. Let it rest for 5 minutes. Place the bowl in a microwave for 45 seconds (microwave for 10 seconds at a time and check it in between) or place the bowl in a pan of barely simmering water, stir to ensure the gelatine has completely dissolved.<br />5. Whisk the gelatine/whipping cream mixture into the maple syrup mixture and set aside.<br />6. Whisk occasionally for approximately an hour or until the mixture has the consistency of an unbeaten raw egg white.<br />7. Whip the remaining cream. Stir 1/4 of the whipped cream into the maple syrup mixture. Fold in the remaining cream and refrigerate for at least an hour.<br />8. Remove from the fridge and divide equally among your edible containers.</div></div><div><br /></div><div>For my "edible container" I chose to make my favorite pie crust, <a href="http://kristiinthekitchen.blogspot.com/2010/12/chocolate-chip-pie-toll-house-pie.html">pat-in-the-pan pie crust</a>. </div><div><br /></div><div>I sprinkled the mini desserts with chopped pecans and then I drizzled some of them with chocolate syrup. </div><div><br /></div><div>These little beauties turned out absolutely wonderful. The maple mousse was delicious and could be used for a multitude of desserts. If you are looking for a change from regular old <a href="http://kristiinthekitchen.blogspot.com/2010/02/brownies-by-nigella.html">brownies</a> (not that there's anything wrong with <i>those</i>) then give these a whirl. </div><div><br /></div><div>I consider these a <i>fancy </i>dessert <span class="Apple-style-span" >(pinkies in the air!)</span>. Meaning you could take them somewhere where you want to impress people with your fancy baking skills. <div><br />1 1/3 cups flour<br />1 teaspoon salt<br />11 ounces white chocolate, coarsely chopped <span class="Apple-style-span" >(I used Ghirardelli white chocolate chips)</span><br />1 1/2 sticks (12 tablespoons) unsalted butter, cut into 1-inch pieces<br />1½ cups sugar<br />½ cup packed brown sugar<br />5 eggs, at room temperature<br />2 teaspoons vanilla<br />1 cup shredded coconut<br /><br />Preheat the oven to 350 degrees F. Butter the sides and bottom of a 9×13 pan. Line the pan with parchment paper.<br /><br />In a medium bowl, whisk the flour and salt together.<br /><br />Put the white chocolate and butter in a large bowl and set it over a saucepan of simmering water, stirring occasionally, until the chocolate and butter are completely melted and smooth. Turn off the heat, but keep the bowl over the water and add the sugars. Whisk until completely combined, then remove the bowl from the pan. The mixture should be room temperature.<br /><br />Add 3 eggs to the white chocolate mixture and whisk until combined. Add the remaining eggs and whisk until combined. Add the vanilla and stir until combined. Do not overbeat the batter at this stage or your brownies will be cakey.<br /><br />Sprinkle the flour mixture and the coconut over the chocolate mixture. Using a rubber spatula (not a whisk), fold the flour and coconut mixture into the chocolate until just a bit of the flour mixture is visible.<br /><br />Pour the batter into the prepared pan and smooth the top. Bake in the center of the oven for 35-40 minutes, rotating the pan halfway through the baking time, until a toothpick inserted into the center of the brownies comes out with a few moist crumbs sticking to it and the top is dark golden brown. Let the brownies cool completely, then lift them out of the pan using the parchment paper. Serve them for Daylight Savings Time. Serve them on Tuesday. </div><div>Just do it. </div><div><br /></div><br />3 tablespoons sugar<br />1 package dry yeast (2 1/4 teaspoons)<br />1 cup warm fat-free milk (100° to 110°)<br />3 cups flour, divided<br />3/4 teaspoon salt<br />3 tablespoons butter, softened<br />Cooking spray<div><br />Dissolve sugar and yeast in warm milk in a large bowl; let stand 5 minutes. Lightly spoon flour into dry measuring cups; level with a knife. Add 2 3/4 cups flour and salt to yeast mixture; stir until a dough forms. (I used the microwave but you can also do this in a saucepan on the stove.)</div><div>With your mixer on low speed, gradually add the warm liquid to the flour/yeast mixture, beating until well blended. Increase the mixer speed to medium and beat for 2 minutes. Add the eggs and 1 cup of the flour and beat for another 2 minutes. </div><div>Using a wooden spoon, stir in enough of the remaining flour to make a dough that holds together. Switch your whisk attachment to your dough hook. (You can also hand knead the dough on a well-floured counter.) Knead the dough on low for 8-10 minutes adding as much of the 1 1/2 cups of flour as necessary to keep it from sticking. The dough should be soft, smooth, and elastic. </div><div>Place the ball of dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise until doubled, about 45-60 minutes. </div><div><br /></div><div>To prepare the filling:</div><div>Chop the nuts and set aside. Combine the sugar and cinnamon and set aside. Measure your chocolate chips and set aside. </div><div><br /></div><div>To prepare the meringue:</div><div>Once the dough has doubled, make the meringue.</div><div>In a clean plastic or metal bowl combine the egg whites and salt and beat on low for 30 seconds. Increase speed to high and beat until foamy and opaque (several minutes). Add the vanilla and the 1/2 cup of sugar--1 tablespoon at a time as you beat--until very stiff, glossy peaks form.</div><div><br /></div><div>To assemble the coffee cakes:</div><div><span class="Apple-style-span" style="color: rgb(68, 34, 0); line-height: 15px; "><span class="Apple-style-span" >Line 2 baking/cookie sheets with parchment paper.</span></span></div><div><span class="Apple-style-span" style="color: rgb(68, 34, 0); line-height: 15px; "><span class="Apple-style-span" ><p style="margin-top: 1em; margin-right: 10px; margin-bottom: 1em; margin-left: 0px; ">Punch down the dough and divide in half. On a lightly floured surface, working with one piece of the dough at a time (keep the other half of the dough covered in plastic wrap), roll out the dough into a 20 x 10-inch rectangle. Spread half of the meringue evenly over the rectangle up to about 1/2-inch from the edges. Sprinkle half of your filling evenly over the meringue (half of the cinnamon-sugar followed by half the chopped nuts and half of the chocolate chips).</p><p style="margin-top: 1em; margin-right: 10px; margin-bottom: 1em; margin-left: 0px; ">Now, roll up the dough jellyroll style, from the long side. Pinch the seam closed to seal. Very carefully transfer the filled log to one of the lined cookie sheets, seam side down. Bring the ends of the log around and seal the ends together, forming a ring, tucking one end into the other and pinching to seal.</p><p style="margin-top: 1em; margin-right: 10px; margin-bottom: 1em; margin-left: 0px; ">Using kitchen scissors or a sharp knife, make cuts along the outside edge at 1-inch intervals. Make them as shallow or as deep as desired but don’t be afraid to cut deep into the ring.</p><p style="margin-top: 1em; margin-right: 10px; margin-bottom: 1em; margin-left: 0px; ">Repeat with the remaining dough, meringue and filling.</p><p style="margin-top: 1em; margin-right: 10px; margin-bottom: 1em; margin-left: 0px; ">Cover the 2 coffee cakes with plastic wrap and allow them to rise again for 45 to 60 minutes.</p><p style="margin-top: 1em; margin-right: 10px; margin-bottom: 1em; margin-left: 0px; ">Preheat the oven to 350°F.</p><p style="margin-top: 1em; margin-right: 10px; margin-bottom: 1em; margin-left: 0px; ">Brush the tops of the coffee cakes with an egg wash:</p><p style="margin-top: 1em; margin-right: 10px; margin-bottom: 1em; margin-left: 0px; ">1 egg beaten with 1 teaspoon water</p><p style="margin-top: 1em; margin-right: 10px; margin-bottom: 1em; margin-left: 0px; ">Bake in the preheated oven for 25 to 30 minutes until risen and golden brown. It was a glorious morning!<div>With four little kids we don't make it out of the house for breakfast often--or ever, actually! I enjoy recreating our favorite breakfasts that we have eaten out before. The kids ALWAYS request I make their favorite <a href="http://kristiinthekitchen.blogspot.com/2009/10/buttermilk-pancakes.html">pancakes </a>but when I am feeling really selfish I will make these for Ryan and I and the kids can just have cereal if they don't want the Swedes (ooooh, I am SO mean!).</div><div><br /><div>I made the batter before I went to bed so they were a snap to make in the morning. This recipe makes about fourteen 10" pancakes, I can easily eat four myself.</div></div><div><br /></div><div>These are typically served with Lingonberry sauce (you know, like you can get at Ikea). I don't really care for Lingonberries so I made my own sauce with raspberry jam and sour cream. </div><div><br /></div><div>Swedish Pancakes</div><div><br /></div><div>3 eggs</div><div>2 cups milk</div><div>1 1/3 cup flour</div><div>1/2 tsp salt</div><div>1/2 tsp baking powder</div><div>6 tablespoons butter, melted</div><div><br /></div><div>Beat eggs with 1/2 cup of milk with a mixer until frothy (several minutes). Whisk together flour, salt and baking powder and add all at once to the egg mixture. Beat until smooth (batter will be heavy). Add remaining milk and butter and beat until smooth. Batter should be fairly thin. Add more milk if necessary. </div><div>Heat one or two (I get bored waiting between batches) 10" skillets over medium heat, or until water flicked onto the surface sizzles. Lightly grease the pan with cooking spray (only necessary before your first pancake, the butter in the batter will keep the pan greased). </div><div>Pour about 1/4 cup of batter into the pan and swirl the pan around so the batter spreads out to the edge and makes a large, thin pancake. </div><div>Cook for about a minute until the edges are beginning to brown then flip over to continue cooking on the other side. I use tongs to flip them over. </div><div>Fold the pancake in half and then in half again so it's a quarter of a circle and slide onto your plate. Repeat with remaining batter. </div><div>You can preheat the oven to 200 F to keep the cooked pancakes warm until you are ready to serve. </div><div><br /></div><div>Simple Raspberry sauce:</div><div><br /></div><div>Mix together equal parts raspberry jam and sour cream. I can't wait to make this again!<br /><br />1 tablespoon olive oil<br />1 medium onion, diced<br />2 cloves garlic, minced<br />2 (14.5-ounce) cans of no-salt-added diced tomatoes, with their juices<br />1/4 cup finely minced fresh flat-leaf parsley<br />1 tablespoon finely minced fresh dill<br />1 1/4 pounds medium shrimp, peeled and deveined<br />1/4 teaspoon salt<br />1/4 teaspoon freshly ground black pepper<br />2/3 cup crumbled feta cheese (about 3 ounces)<br /><br />Preheat the oven to 425 degrees F.<br /><br />Heat the oil in an oven proof skillet over a medium-high heat. Add the onion and cook, stirring, until softened, about 3 minutes, then add the garlic and cook for 1 minute. Add the tomatoes and bring to a boil. Reduce the heat to medium-low and let simmer for about 5 minutes, until the tomato juices thicken.<br /><br />Remove from the heat. Stir in the parsley, dill, and shrimp and season with salt and pepper. Sprinkle the feta over the top. And now I present to you...</span><div><br /></div><div><span class="Apple-style-span"><i><b>Moon Pies</b></i></span></div><div><i><br /></i></div></div></div><i>For the Cookies:</i><br />2 sticks unsalted butter, at room temperature<br />¾ cup light brown sugar<br />1 egg<br />1 teaspoon vanilla extract<br />2¼ cups flour<br />½ teaspoon salt<div><br /><i>For the Marshmallow Filling*:</i><br />2 egg whites<br />Pinch cream of tartar<br />Pinch salt<br />2/3 cup light corn syrup<br />2 teaspoons vanilla extract<br />1 cup powdered sugar, sifted</div><div><br /><i>For the Chocolate Coating:</i><br />12 ounces (2 cups) semisweet chocolate chips<br />¼ cup vegetable oil</div><div><br /></div><div>1. To Make the Cookies: With a mixer on medium speed, beat the butter until creamy, about 3 minutes. Add the brown sugar and beat at medium-high speed until light and fluffy, about 3 minutes. Reduce the speed to medium, add the egg and the vanilla extract, and beat to combine. Reduce the speed to low, add the flour and the salt, and mix just until a soft dough forms. Divide the dough in two, shape into disks, wrap in plastic wrap and refrigerate for at least 30 minutes.<br /><br />2. Preheat the oven to 350 degrees F. Line at least two baking sheets with parchment paper or a silicone baking mat; set aside. Working with one disk at a time, roll out the dough to about 1/8-inch thickness. Using a 1½-inch diameter round cutter, cut out the rounds and place them on the prepared baking sheets, about ½ an inch apart. Refrigerate the cookies (on the baking sheets) for 10 minutes.<br /><br />3. Bake the cookies for 10 to 12 minutes, or until lightly browned. Cool on the pans for a couple of minutes, and then move to a cooling rack to cool completely.<br /><br />4. To Make the Marshmallow Filling: Using a mixer with the whisk attachment, beat the the egg whites with the cream of tartar and the salt until firm peaks form, gradually increasing from medium-low speed to medium-high speed as the egg whites gain volume. Meanwhile, in a small saucepan, boil the corn syrup over high heat without stirring until it registers 230 to 235 degrees F on a candy thermometer (thread ball stage). Slowly drizzle the hot corn syrup into the egg whites and beat at high speed until glossy, about 2 minutes. Reduce the speed to medium-low, beat in the vanilla extract and the powdered sugar.<br /><i>*I found this made enough marshmallow filling for double the amount of cookies so I ended up tossing half of it, next time I will double the amount of cookies. </i></div><div><br />5. Set aside.</div><div>Add sugar and honey to a medium saucepan. Heat pan over medium heat until just boiling. Remove from heat. Add peanut butter and stir until all incorporated. The original recipe calls for these cookies to be portioned out to 1/4-pound pieces of cookie dough, resulting in 12 <strong>giant</strong> cookies. I thought such giant cookies would be too dangerous to have lying around so I made them smaller and got 2 dozen instead.<br /><br />1 cup (2 sticks) cold, unsalted butter, cubed<br />1¼ cup sugar<br />2 large eggs<br />½ cup dark cocoa powder<br />2¼ cups all-purpose flour<br />¼ tsp. coarse salt<br />1 tsp. baking powder<br />2½ cups semi-sweet chocolate chips<br /><br />Directions:<br />Preheat the oven to 350˚ F. Line baking sheets with parchment paper or silicone baking mats. In the bowl of an electric mixer, combine the butter and sugar. Beat together on medium-high speed until light and fluffy, 2-3 minutes. Blend in the eggs one at a time, scraping down the bowl as needed. Mix in the cocoa powder until well blended. Add the flour, salt and baking powder to the bowl and mix on low speed just until incorporated. Fold in the chocolate chips with a spatula. Transfer the dough to a work surface and knead briefly by hand to be sure the ingredients are well combined.<br /><br />Divide the dough into 4 ounce portions (or divide into 12 equal pieces). Roll each portion of dough into a ball and flatten just slightly into a disc. Place on the prepared baking sheets, a few inches apart. Preheat oven to 400 degrees.</div>

Rub the potatoes liberally with canola oil. Place on a baking sheet and bake for 45 minutes to 1 hour; until the potatoes are fork-tender.</div>

Slice the potatoes in half lengthwise. With a cookie scoop or spoon, scrape out the inner flesh of the potatoes, leaving a small margin of potato in the skins.</div>
<div>
Brush both sides of the potato skins with canola oil. Salt both sides liberally.</div>
<div>
Place the skins cut side down on the pan and return to the oven. Bake for 7 minutes and flip the skins to the other side. Bake for 7 minutes more, or until the skins are crispy. </div>
<div>
Sprinkle potato skins with cheese and bacon and return to oven just to melt the cheese. </div>
<div>
Just before serving, spoon 1 tablespoon of sour cream on each skin and sprinkle with sliced green onions. </div>

These are a super fast, crowd-pleasing dessert. </div><br />3 tbsp. unsalted butter, plus more for greasing the pan<br />1 cup graham cracker crumbs<br />¾ cup sweetened condensed milk<br />1 1/3 cups semisweet chocolate chips<br />1½ tsp. vanilla extract<br />Pinch of salt<br />1 1/2 cups mini marshmallows<br />2 whole graham crackers<br /><br />Directions:<br />Line an 8 x 8-inch baking dish with aluminum foil. Lightly butter the foil. Place the butter in a heatproof bowl and microwave until melted. Mix in the graham cracker crumbs and stir with a fork until the crumbs are evenly moistened. Pour the crumb mixture into the bottom of the prepared pan and press firmly into an even layer on the bottom of the pan.<br /><br />In a medium saucepan over medium heat, combine the condensed milk and chocolate chips. Heat, stirring occasionally, until the chocolate is completely melted and the mixture is smooth. (You can also do this in the microwave stirring after 15-second increments).
